This is about the same amount of alcohol as what’s in overripe bananas and pears. So I wouldn’t be concerned about it. And for bacteria, most commercial kombucha manufacturers adhere to strict safety practices and I couldn’t find any evidence of food poisoning from commercial kombucha.
